v18 - Missing Info When Scraping New Media

I'm having an issue with no media info flags appearing when adding new Movies/TV shows to my Kodi libraries, as reported in this post:-

Karellen was good enough to inform me that this issue is not due to the scraper, as file info is read directly from the video file, so I'm not entirely sure I'm posting in the correct place (If not, could somebody please move to the appropiate section). All I know for sure is anything new I've been adding to my Kodi libraries since about 8/9th Nov is not capturing this info, nor is it writing the info to my NFO file when I export my library.
Thinking the problem might be with my library DB file, I have today removed all my libraries and completely un-installed Kodi (including the profile folder) and installed a completely fresh copy of Kodi 18.5 onto my Windows 10 PC.
After setting up my Kodi configuration, I added my 4K movies as that's the smallest library I have in my media collection. All media flags were showing correctly, with the exception of Doctor Strange which was is the most recent addition to my collection (12th Nov). The video file has all the relevant codec, audio and language details so I do not understand why I'm still not getting this info appearing in Kodi?

I removed the file from Kodi, activated the debug log to capture me re-adding the movie, scraping it, playing it and then exporting my library. Again, no media flags in Kodi and nothing written to NFO file, after exporting library.

The problem only seems to affect files created after the 8/9th Nov. I thought having a completely fresh install would fix the issue, but it hasn't. I probably have between 20-30 new episodes which were created after these dates and maybe 10-15 new movies as well. These are quite large libraries, so will take a long time to scrape. Would be very frustrating waiting for them to scrape, only to find out that still I'm missing media info on the newest files.

If somebody could take a look at my logs and see if there is anything obvious standing out that might be causing this to happen, I would be very grateful.
